Good morning! What’cha up to? I’m Miss Funky McFunkerson today, boo. It’s beautiful outside luckily, and hopefully that’ll whip me into shape. My neighbor has graciously agreed to let me come down and use her oven. I’ll be stealing my brother-in-law’s recipe for (the perfect) chocolate chip cookies and hopefully they’ll turn out well enough so that Harold can take them into work. We’ve been wanting to make something to send in for awhile, but without a working oven it’s tricky to think of anything that anyone would actually want. Any good ideas for non-oven treats to send to an office full of nice and wonderful people?
Anyhow, I’m going to look at pretty pictures to get me giddy.
Le’ssee what we can find:
Ahh… feeling better already.
Yours,
Rebecca

Minute cookies:
2 cups white sugar
3 tablespoons unsweetened cocoa powder
1/2 cup margarine
1/2 cup milk
1 pinch salt
3 cups quick cooking oats
1/2 cup peanut butter
1 teaspoon vanilla extract
Directions
In a saucepan bring sugar, cocoa, margarine, milk, and salt to a rapid boil for 1 minute. (wait to start timing the one minute until it’s a ROLLING boil)
Add quick cooking oats, peanut butter, and vanilla; mix well.
Working quickly, drop by teaspoonfuls onto waxed paper, and let cool.

It is sooooo wrong that your landlord has not fixed your oven yet!! If you get desperate one day, please send me his number. I can use my firm voice and let him know what I think about letting this go for so long. You are a far more patient person than me or my hubby (who cannot live without pizza, pizza rolls, french fries and many other things that must be baked in an oven!!). We applaud your ingenuity for using a crock pot to do so much cooking, but when I saw a post about cookies, I was so sad that you had to borrow an oven.
